Very Veggie Salad

Ingredients

  • 6 c. cauliflower and/or broccoli florets
  • 1 red pepper, chopped in 1/2 inch squares
  • 1/3 c. chopped onion
  • 1/2 c. balsamic vinegar
  • 1 tsp. southwest seasoning

Directions

    Bring 2 qt. water to boil in saucepot.

    Add veggies and cook 2 minutes, drain and rinse in cold water.
  3. 3
    In bowl, combine veggies, red pepper cut in 1/2 inch squares, onion, vinegar and seasoning. Toss and serve.
