Very Veggie Salad

- 6 c. cauliflower and/or broccoli florets
- 1 red pepper, chopped in 1/2 inch squares
- 1/3 c. chopped onion
- 1/2 c. balsamic vinegar
- 1 tsp. southwest seasoning
Directions

1Bring 2 qt. water to boil in saucepot.

2Add veggies and cook 2 minutes, drain and rinse in cold water.

3In bowl, combine veggies, red pepper cut in 1/2 inch squares, onion, vinegar and seasoning. Toss and serve.
