Ingredients

  • 3 leeks (about 1/4 lb.)
  • 1/4 c. butter or oleo
  • 1 qt. chicken broth
  • 1 small onion, chopped
  • 5 medium potatoes, peeled and chopped
  • 1/4 tsp. white pepper
  • 1 Tbsp. snipped chives
  • 1 tsp. salt
  • 1 c. whipping cream
  • 1 tsp. dried chervil
  • 1 c. milk

Directions

    Use only white part of leeks and chop fine.

    Saute leeks and onion in melted butter until soft (about 10 minutes).

    Stir in potatoes and chicken broth.

    Heat to boiling.

    Simmer uncovered for 45 minutes until potatoes are done.

    Remove from heat and put in blender.

    Blend until pureed.

    Stir in cream, milk, salt, pepper and spices.

    Cool and serve!
