- 1 (3 oz.) pkg. cream cheese
- 1/2 c. butter or margarine
- 1/2 tsp. grated lemon rind
- 1 c. all-purpose flour
- 2 Tbsp. granulated sugar
- apricot or strawberry preserves
Directions

1Cream together cream cheese and butter until smooth and light. Beat in lemon rind.

2Combine flour and sugar.

3Stir in half of the flour mixture to creamed mixture, blending well.

4Stir in remaining flour.

5Roll dough out onto a lightly floured board to 1/8-inch thickness.

6Cut into 2-inch rounds.

7Spoon 1/4 to 1/2 teaspoon of preserves in center of each round.

8Form to a triangle by folding in three edges.

9Pinch edges gently.

10Bake at 350° for 12 to 14 minutes.

11Cool cookies for a few minutes.

12Remove to a rack to complete cooling.

13Store in a tin.
