- 1 c. Ritz cracker crumbs
- 1/2 stick butter, melted
- 2 c. Vidalia onions, thinly sliced
- 2 Tbsp. butter
- 2 eggs
- 3/4 c. milk
- 3/4 tsp. salt
- dash of pepper
- 1/4 c. grated sharp Cheddar cheese
- paprika
- parsley
Directions

1Mix Ritz cracker crumbs and melted butter.

2Press into 8-inch pie plate.

3Saute onions with 2 tablespoons butter until clear. Spoon into pie crust.

4Beat eggs with milk, salt and pepper and pour over onions.

5Sprinkle with cheese and paprika.

6Bake at 350° for 30 minutes or until center is firm.

7Sprinkle with parsley before serving.
