  • 1 (9-inch) pie shell (unbaked)
  • 2 to 3 Vidalia onions, thinly sliced
  • 1/4 c. butter
  • 3 eggs, beaten
  • 8 oz. sour cream
  • 1/4 tsp. salt
  • 1/2 tsp. white pepper
  • 1/4 tsp. Tabasco sauce
  • 3 Tbsp. grated Parmesan cheese

    Preheat oven to 400°.

    Bake crust for 6 minutes, just long enough to set it but not brown it.

    Set aside and let cool. Increase oven temperature to 450°.

    Slice enough onions to nearly fill the crust.

    Saut onions in butter.

    In a bowl, combine eggs and sour cream, mixing well.

    Add onions, salt, pepper, Tabasco sauce and cheese.

    Pour into pie shell.

    Bake for 20 minutes at 450°, then reduce oven temperature to 325°, baking another 20 minutes.
