- 1 (9-inch) pie shell (unbaked)
- 2 to 3 Vidalia onions, thinly sliced
- 1/4 c. butter
- 3 eggs, beaten
- 8 oz. sour cream
- 1/4 tsp. salt
- 1/2 tsp. white pepper
- 1/4 tsp. Tabasco sauce
- 3 Tbsp. grated Parmesan cheese
Directions

1Preheat oven to 400°.

2Bake crust for 6 minutes, just long enough to set it but not brown it.

3Set aside and let cool. Increase oven temperature to 450°.

4Slice enough onions to nearly fill the crust.

5Saut onions in butter.

6In a bowl, combine eggs and sour cream, mixing well.

7Add onions, salt, pepper, Tabasco sauce and cheese.

8Pour into pie shell.

9Bake for 20 minutes at 450°, then reduce oven temperature to 325°, baking another 20 minutes.
