- 2 (9-inch) pie shells, baked
- 4 eggs, beaten
- 1 c. sour cream (generous c.)
- salt and pepper to taste
- 1 stick butter
- 6 large Vidalia onions, sliced thinly
- 1/4 c. grated Parmesan cheese
- 4 shakes Tabasco sauce
- 1/4 c. grated cheese (for top)
Directions

1Cook onions in butter until clear and soft (about 15 minutes), stirring often.

2Add all other ingredients.

3Mix and pour into the 2 baked pie shells.

4Sprinkle grated cheese on top.

5Bake in a 375° oven for 20 minutes, then lower temperature to 350° for an additional 40 minutes until lightly browned on top.
