- 2 c. sliced Vidalia onions
- 2 c. sliced zucchini squash
- 2 c. sliced ripe tomatoes
- 1/2 c. cilantro (fresh)
- 1 stick butter
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. water
Directions

1Use a two-quart buttered casserole.

2Chop fresh cilantro into 1-inch sprigs.

3Layer each of above ingredients, starting with a layer of zucchini on the bottom.

4Between layers, sprinkle the seasonings to taste.

5Bake in a 350° oven for 30 minutes.

6Add water before placing casserole in oven.

7Three layers are a desirable number.
