Ingredients

  • 2 c. sliced Vidalia onions
  • 2 c. sliced zucchini squash
  • 2 c. sliced ripe tomatoes
  • 1/2 c. cilantro (fresh)
  • 1 stick butter
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. water

Directions

    Use a two-quart buttered casserole.

    Chop fresh cilantro into 1-inch sprigs.

    Layer each of above ingredients, starting with a layer of zucchini on the bottom.

    Between layers, sprinkle the seasonings to taste.

    Bake in a 350° oven for 30 minutes.

    Add water before placing casserole in oven.
  7. 7
    Three layers are a desirable number.
