Vietnamese Beef Salad

- 1 tbsp peanut oil
- 2 lb beef tenderloin, trimmed
- 1/2 cup spicy salad dressing
- 1 lb mixed cherry tomatoes, halved
- 10 oz mixed greens
- 1/4 cup fresh mint leaves
Directions

1Heat oil in a medium frying pan. Cook beef for 3 mins per side, or until cooked to your liking. Transfer to a large serving plate and drizzle with 2 tbsp dressing. Cover and let rest for 5 mins. Slice thinly.

2Combine tomatoes, mixed greens, mint and remaining dressing in a large bowl. Season. Serve topped with beef.
