- 5 pound bone-in pork shoulder
- Salt
- Freshly ground black pepper
- 1 large egg
- 2 tablespoon fresh lime juice
- 1 tablespoon Creole or other whole grain mustard
- 1 tablespoon chili paste
- 2 tablespoons sesame oil
- 1 cup vegetable oil
- 1 loaf French bread (about 24 inches long)
- 2 cups julienne carrots
- 2 cups julienne cucumbers, (peeled and seeded)
- 1 cup chopped scallions (green onions)
- 1 cup loosely packed fresh cilantro leaves
- 1 medium fresh jalapeno, thinly sliced

1Preheat the oven to 400 degrees F. Season the shoulder with salt and pepper.

2Place on a baking sheet and roast for 1 hour.

3Reduce the temperature to 300 degrees F and continue to cook for 3 hours, or until the meat falls off the bones.

4Remove from the heat and cool completely.

5In the cup of a blender, combine the egg, lime juice, mustard, chili paste, and sesame oil.

6Season with salt and pepper.

7Process until smooth.

8With the blender running, slowly drizzle in the oil and blend.

9The mixture will be thick.

10Season with salt and pepper.

11Remove, cover and refrigerate for at least 1 hour.

12The mixture will keep for up to 2 days.

13Slice the roast pork.

14To assemble, slice the bread in half.

15Spread the chili mayo over both halves of bread.

16Layer the pork over one half of the bread, set the other half aside.

17Continue layering with the carrots, cucumbers, scallions, cilantro and jalapeno.

18Place the remaining half on top and press slightly.

19Slice the sandwich into individual pieces and serve.
