- 2 c. sugar
- 4 eggs
- 4 Tbsp. vinegar (plain white)
- 4 Tbsp. cornstarch
- 2 c. water
- 2 small lumps butter
- 1 tsp. lemon extract
- 1 (9-inch) baked pie shell
- whipped cream
Directions

1Combine sugar, eggs, vinegar, cornstarch and water in double boiler and cook until thick and smooth, stirring occasionally. Just before removing from heat, stir in the two small lumps of butter and lemon extract.

2Pour into baked pie shell.

3Top with whipped cream.

4Makes one 9-inch pie.
