Vodka Sauce

  • 1/4 lb. Prosciutto
  • 1/4 c. vodka
  • 3 pt. heavy cream
  • 2 c. Parmesan cheese
  • 4 egg whites, slightly beaten
  • 1 (16 oz.) can whole peeled tomatoes
  • 1/2 c. Mozzarella cheese
  • peas (optional)

Directions

    In frying pan, cube Prosciutto and saute in 2 tablespoons butter until browned; add vodka (flame vodka for 10 seconds).

    Put remaining ingredients in pot.

    Be sure to break up tomatoes and all juice; heat.

    Add Prosciutto and juice from frying pan.

    Cook on low for 20 to 30 minutes.

    Makes enough sauce for 3/4 to 1 pound pasta.
