  • 2 1/4 teaspoons yeast
  • 1/4 cup milk lukewarm
  • 3 eggs separated
  • 1/4 cup melted butter
  • 180 grams melted butter cooled to room temperature
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 4 cups flour
  • 2 1/2 cups milk lukewarm

Directions

    Mix the yeast with the cup of lukewarm milk and let rest 5 minutes.

    Mix the egg yolks with the remaining lukewarm milk and the butter. Add to the yeast mixture.

    Add the sugar and salt and then the flour alternating with the milk, flour last.

    Beat the egg whites until peaks are formed and fold into the batter.

    Cover with plastic wrap and let rest in a warm place until doubled in volume, up to 1 or 2 hours.

    Lightly mix to deflate the batter. Make waffles with the batter, following the directions on the waffle iron.
