  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1/2 teaspoon salt
  • Dash nutmeg
  • 1 c. lowfat milk
  • 1 tbsp. sherry (optional)
  • 1 c. shredded Swiss cheese
  • Fish fillets (about 6 nice size halves)
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon pepper
  • 3 tbsp. butter
  • 1/2 c. fine dry bread crumbs
  • 1 green pepper

    Heat oven to 325 degrees.

    Grease 9 x 13 inch pan.

    In 1 qt saucepan, heat 2 Tbsp.

    butter, stir in flour, salt, nutmeg and lowfat milk (and sherry).

    Cook over medium, stir constantly till thick and bubbly, about 4 min.

    Stir in cheese till melted, set aside.
