Ingredients

  • 5 lbs lean beef (approximate)
  • 5 cups water
  • 3 tablespoons pepper
  • 1 tablespoon onion salt
  • 1 tablespoon msg
  • 1 tablespoon dry mustard
  • 12 cup Hi Mountain hickory blend jerky cure (You can also use Morton's Tender Quick Home Meat cure)
  • 2 tablespoons paprika
  • 13 cup unbleached cane sugar (do not substitute)
  • 1 tablespoon garlic salt
  • 13 cup Worcestershire sauce

Directions

    MIx all ingredients (this is the marinade)

    Cut lean meat in 1/4 inch slices.

    and marinade 6 hours or overnight.

    Drain and blot meat to remove any remaining moisture.

    Do not rub off the black pepper.

    Smoke at 150-200 degrees 6-8 hours.
