Walnut Pasta Salad

Ingredients

  • 4 oz. vermicelli or spaghetti, broken
  • 2 (6 oz.) jars marinated artichoke hearts
  • 1 clove garlic, minced
  • 1/2 tsp. dried basil, crushed
  • 1 c. sliced fresh mushrooms (optional)
  • 2 tomatoes, seeded and chopped
  • 1/2 c. sliced green onions
  • 1 c. walnuts

Directions

    Cook pasta in boiling salted water according to package directions.

    Rinse and drain.

    Drain artichoke hearts, reserving marinade.

    Blend marinade with garlic and basil.
  5. 5
    Chop artichokes. Toss with pasta, mushrooms, tomatoes, onion and marinade mixture. Cover and chill.

    Toss in walnuts before serving.

    Makes 4 to 6 servings.
