Ingredients

  • 1 Tbsp. vinegar
  • 1 c. milk
  • 1 1/2 c. sifted all-purpose flour
  • 3/4 tsp. salt
  • 1/2 tsp. double-acting baking powder
  • 1 tsp. baking soda
  • 1/2 c. granulated sugar
  • 1 egg, beaten
  • 1/3 c. molasses
  • 3/4 c. uncooked rolled oats
  • 3/4 c. seedless raisins
  • 1/4 c. chopped walnuts
  • whipped cream cheese, softened

    Day Before:

    Add vinegar to milk; let stand.

    Start heating oven to 350°.

    Grease well and lightly flour 9 x 5 x 3-inch loaf pan.

    Sift together flour, salt, baking powder, baking soda and sugar.

    Then stir in egg, molasses and milk mixture all at once. Fold in oats, raisins and walnuts.

    Turn at once into prepared pan.

    Bake 60 to 70 minutes or until cake tester inserted in center comes out clean.

    Cool on wire rack; wrap in Saran or foil and store overnight.

    Serve, sliced, with cheese.
