Walnut Torte

Ingredients

  • 6 eggs, separated
  • 1 tsp. vanilla
  • 1 Tbsp. fine dry bread crumbs
  • 1 c. sugar
  • 2 c. ground walnuts
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg

Directions

    In a bowl, beat the egg yolks with 1/2 cup sugar until thick and fluffy (about 10 minutes).

    Combine vanilla, walnuts, bread crumbs, salt and nutmeg, then fold into egg yolk mixture.

    In another bowl, beat the egg whites and remaining half cup of sugar until satiny.

    Fold the egg yolk mixture into the egg white mixture.

    Pour into a buttered and crumb lined spring-form pan (8-inch).

    Bake in moderate oven (350°) for 50 minutes.

    Remove to a rack to cool.

    (It will shrink.)

    When cool, remove rim from pan and cut torte crosswise into layers.
