- 2 c. whole wheat pancake mix
- 3/4 c. walnuts, chopped
- 1 scoop whey protein (optional)
- 3 Tbsp. ground cinnamon
- 2 c. skim milk or soy milk
- 1 c. egg whites
- 1/2 c. applesauce
- nonstick cooking spray
Directions

1In a large bowl, combine pancake mix, walnuts, whey protein and cinnamon.

2Blend milk, egg whites and applesauce in a blender. Add the wet mix to the dry, mixing thoroughly.

3Set waffle iron to low for soft waffles or medium to high for the crisper variety. Coat waffle griddle with nonstick cooking spray.

4Pour a quarter of the mixture into the waffle iron.

5The waffle iron will automatically tell you when it's done.

6Makes 4 large waffles.
