Walnut Zucchini Bread

Ingredients

  • 1/2 to 1 c. chopped nuts
  • 4 eggs or 1 carton Egg Beaters to equal 4 eggs
  • 2 c. sugar
  • 1 c. plus 1 Tbsp. vegetable oil or applesauce
  • 3 1/2 c. unsifted flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 3/4 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 c. grated plus 1 c. shredded zucchini
  • 1 c. raisins
  • 1 tsp. vanilla

Directions

    Beat sugar into eggs or Egg Beaters.

    Then beat in oil (or applesauce).

    Combine dry ingredients; add to first mixture.

    As you add the dry ingredients, add it one at a time and add a little bit of zucchini in between each one.

    Stir in raisins, walnuts and vanilla.

    Put into 2 greased and floured loaf pans (9 x 5 x 2 3/4-inch).

    Bake at 350° for 55 minutes (may take longer in certain ovens).

    Let stand for 10 minutes.

    Remove and let cool. The loaves freeze well.
