  • 4 cups cauliflower florets no bigger than 1 1/2-inches long
  • 2 tablespoons olive oil plus more for drizzling
  • 1/2 teaspoon kosher salt
  • 4 ounces goat cheese softened
  • 1/2 teaspoon pink peppercorns freshly crushed, divided
  • 1 tablespoon chives chopped
  • 1 bag Stacy's Multigrain Pita Chips

    Preheat oven to 450.

    Toss cauliflower in large bowl with 2 Tbsp. olive oil and salt.

    Arrange in a single layer on rimmed baking sheet; bake 10 minutes. Toss with a spatula, rotate baking sheet; bake 10 minutes more until deeply golden brown and tender.

    Remove from oven; cool slightly.

    Transfer to a food processor bowl.

    Add goat cheese and 1/4 tsp. peppercorns; pulse until smooth.

    Stir in chives and parsley.

    Transfer to serving dish; drizzle with olive oil and remaining peppercorns.
