  • 6 egg yolks
  • 6 Tbsp. butter
  • 1/2 tsp. cinnamon
  • 1 Tbsp. cocoa
  • 2 1/3 c. bread crumbs
  • 1/2 c. grated almonds
  • 1/4 c. cherry juice (reserved from cherries)
  • 6 egg whites
  • 3 Tbsp. sugar
  • 1 (16 oz.) can sweet cherries, drained and juice reserved (or use 2 lb. fresh, pitted)

Directions

    Preheat oven to 400°.

    Beat egg yolks, butter and sugar until pale yellow.

    Add cocoa and cinnamon.

    Moisten bread crumbs with cherry juice, add to dough with almonds.

    Beat egg whites with sugar until soft peaks appear.

    Mix carefully into dough, alternately with cherries.

    Bake in a buttered 10-inch spring-form pan.

    After first 10 minutes, turn oven down to 375° and bake 50 minutes more.
