- 6 egg yolks
- 6 Tbsp. butter
- 1/2 tsp. cinnamon
- 1 Tbsp. cocoa
- 2 1/3 c. bread crumbs
- 1/2 c. grated almonds
- 1/4 c. cherry juice (reserved from cherries)
- 6 egg whites
- 3 Tbsp. sugar
- 1 (16 oz.) can sweet cherries, drained and juice reserved (or use 2 lb. fresh, pitted)
Directions

1Preheat oven to 400°.

2Beat egg yolks, butter and sugar until pale yellow.

3Add cocoa and cinnamon.

4Moisten bread crumbs with cherry juice, add to dough with almonds.

5Beat egg whites with sugar until soft peaks appear.

6Mix carefully into dough, alternately with cherries.

7Bake in a buttered 10-inch spring-form pan.

8After first 10 minutes, turn oven down to 375° and bake 50 minutes more.
