Ingredients

  • 4 cups red potatoes, small, chopped into bite size pieces
  • 5 sprigs fresh thyme
  • 2 pieces lemon zest, carved off a lemon using a potato peeler
  • 1 teaspoon salt
  • water
  • 14 cup fresh dill, chopped
  • 12 lemon, the juice of
  • 1 tablespoon butter

Directions

    In a pot, placed diced potatos, thyme, lemon zest, salt and enough water to cover.

    Bring to a boil and cook until tender.

    Drain and let sit for about 5 minutes in the colander.

    Heat butter in pot just until melted.

    add potatos, chopped dill, and lemon juice.

    Toss.

    Season with salt and pepper to taste.
