- 4 cups red potatoes, small, chopped into bite size pieces
- 5 sprigs fresh thyme
- 2 pieces lemon zest, carved off a lemon using a potato peeler
- 1 teaspoon salt
- water
- 14 cup fresh dill, chopped
- 12 lemon, the juice of
- 1 tablespoon butter
Directions

1In a pot, placed diced potatos, thyme, lemon zest, salt and enough water to cover.

2Bring to a boil and cook until tender.

3Drain and let sit for about 5 minutes in the colander.

4Heat butter in pot just until melted.

5add potatos, chopped dill, and lemon juice.

6Toss.

7Season with salt and pepper to taste.
