Ingredients
- 1 c. celery, chopped
- 3 onions, chopped
- 2 green peppers, chopped
- 3 Tbsp. flour
- olive oil or bacon drippings
- 1 can diced tomatoes
- 1 can tomato sauce
- salt and pepper to taste
- sugar to taste
- Creole seasoning
- 2 Tbsp. Zatarain's crab and shrimp boil seasoning
- 1/2 lb. shrimp per person
Directions

1Saute celery, onions and green pepper in the olive oil.

2Brown flour in the vegetable mixture.

3Add tomatoes and tomato sauce. Add salt, pepper, sugar and seasonings.

4Cook on slow simmer, stirring occasionally, for about one hour.

5Add shrimp and cook just until shrimp turns pink.

6Serve Shrimp Creole over rice, add French bread and a salad for a great meal.
