- 2 1/2 c. water
- 2 tsp. salt
- 1 1/2 c. long grain rice
- 3/4 c. pine nuts
- 3/4 c. olive oil
- 1/4 c. fresh lime juice
- 1/2 c. mayonnaise
- 2 Tbsp. Dijon mustard
- 1/2 tsp. pepper
- 2 c. fresh mushrooms, quartered
- 2 medium red bell peppers, cut into cubes
- 6 green onions (white and green parts), sliced
- 1/4 c. fresh coriander, chopped
Directions

1Heat 2 1/2 cups water with salt in saucepan to boiling.

2Add rice and stir.

3Reduce heat to low.

4Cook, covered, until water is absorbed, 12 minutes.

5Let stand, covered, for 10 minutes.
