  • 2 1/2 c. water
  • 2 tsp. salt
  • 1 1/2 c. long grain rice
  • 3/4 c. pine nuts
  • 3/4 c. olive oil
  • 1/4 c. fresh lime juice
  • 1/2 c. mayonnaise
  • 2 Tbsp. Dijon mustard
  • 1/2 tsp. pepper
  • 2 c. fresh mushrooms, quartered
  • 2 medium red bell peppers, cut into cubes
  • 6 green onions (white and green parts), sliced
  • 1/4 c. fresh coriander, chopped

Directions

    Heat 2 1/2 cups water with salt in saucepan to boiling.

    Add rice and stir.

    Reduce heat to low.

    Cook, covered, until water is absorbed, 12 minutes.

    Let stand, covered, for 10 minutes.
