Warming Curry Tofu

Ingredients
- 1 block Tofu
- 1/2 Onion
- 1 Egg
- 350 ml Water
- 3 grams Dashi stock granules
- 2 grams Salt
- 1 1/2 tsp Usukuchi soy sauce
- 1 tsp Mirin
- 1 tsp Sake
- 1/2 tsp or (to taste) Curry powder
- 1 an appropriate amount Katakuriko slurry
Directions

1Slice the onion thinly and saute in oil.

2When the onion has browned, add the curry powder and continue sauteing.

3Add the ingredients, simmer, and skim off the scum.

4Slice the tofu into whatever sized cubes and simmer in the sauce until warmed through.

5Add the katakuriko slurry while stirring until the sauce has thickened.

6Take care not to break up the tofu.

7Drop the unbeaten egg into the middle and cover with a lid.

8When the egg has somewhat set, scatter with some chopped green onion and it's done.
