Watermelon Cooler

  • 8 cups roughly chopped seedless watermelon
  • 32 ounces limeade
  • 1 cup vodka, chilled
  • 1/4 cup mint simple syrup (see page 131)
  • Fresh mint sprigs, for garnish

Directions

    Puree the watermelon in batches in a food processor.

    Strain the pulp through a fine sieve into a glass pitcher.

    Pour the limeade, vodka, and mint simple syrup into the pitcher, and stir everything with a wooden spoon, making sure the cooler is thoroughly mixed.

    Refrigerate until thoroughly chilled.

    Pour into ice-filled glasses, and garnish with mint sprigs.
