Ingredients
- 10 lb. watermelon rind
- 1 qt. white vinegar
- 10 lb. sugar
- 3/4 tsp. oil of cloves
- 3/4 tsp. oil of cinnamon
Directions

1Peel and slice rind in small pieces.

2Cover with cold water. Let stand in cool place for 24 hours.

3Rinse thoroughly, then drain well.

4Cover with cold water and bring to a boil.

5Simmer for 10 minutes, then drain.

6Rinse thoroughly, then drain completely. Bring vinegar, sugar and oils to a boil, stirring until sugar is dissolved; pour over rind in large kettle.

7Stir well until all rind is covered.

8Let stand for 24 hours.

9Boil for 7 to 10 minutes or until rind is tender.

10Pour into crock; stir each day for 5 days.

11Return to kettle; bring to a boil.

12Remove from heat and seal in hot sterilized jars.
