- watermelon rind
- 2 c. vinegar
- 1/2 tsp. oil of cinnamon
- 8 c. sugar
- 1/4 tsp. oil of cloves
Directions

1Remove skin and pulp from watermelon, leaving white rind. Cut into small cubes to make 16 cups.

2Parboil in hot water to cover in pan for 15 minutes or until fork-tender; drain.

3Mix rest of ingredients in pan.

4Bring to a boil.

5Pour over rind. Let stand overnight.

6Drain.
-
7Reserve syrup.

8Bring to a boil. Pour over rind.

9Repeat for 3 more days.

10Heat rind and syrup in pan on fourth day.

11Spoon into hot sterilized jars.

12Seal. Makes 8 pints.
