- 10 lb. watermelon rind, peeled and cut into cubes
- 20 c. sugar
- 2 qt. vinegar
- 2 Tbsp. mixed spices
Directions

1Cover rind with cold water and cook until tender; drain off part of the water.

2Add salt, sugar and vinegar.

3Cook until clear and syrupy like heavy cream.

4Let stand until cold or a day or so, then put into jars.

5Add salt to your taste.
