  • 1/2 gal. watermelon rind
  • 1 c. vinegar
  • 2 c. sugar
  • 1 stick cinnamon
  • 1 tsp. cloves
  • 1 c. lime

Directions

    Cut rind into 1-inch cubes.

    Soak rind in lime water for 3 hours.

    Drain and rinse well.

    Cover with water and cook until tender.

    Mix vinegar, sugar and spices.

    Bring to boil.

    Add rind and simmer for 1 hour.

    Put into jars and seal.
