  • 2 qt. watermelon rind, sliced
  • 3 Tbsp. salt
  • 5 qt. water
  • 3 c. vinegar
  • 2 c. water
  • 5 c. sugar
  • 1 Tbsp. whole cloves
  • 3 sticks cinnamon
  • 1/4 c. maraschino cherries, cut in 1/2 slices

Directions

    Peel green from watermelon rinds; soak in 4 quarts of water and salt for 24 hours.

    Drain.

    Cover melon slices with boiling water and boil 1 1/2 hours.

    Drain and put melon into ice water until thoroughly chilled.

    Drain.
