- watermelon rind
- 1 Tbsp. salt
- 1 qt. water
- sugar
- water
- 1 thinly sliced lemon to 3 qt. rind
Directions

1Pare and cut watermelon rind into pieces 2 inches long and 3/4-inch wide.

2Cover with brine made by dissolving 1 tablespoon salt in 1 quart water.

3Let stand overnight; drain.

4Cover with water and boil for 10 minutes; drain.

5Cover with a heavy syrup made of 1 part sugar and 1 part water.

6Add 1 thinly sliced lemon to each 3 quarts rind.

7Add whole spices, if desired.

8Cook slowly until rind is tender and clear.
