- 4 Tbsp. salt
- 2 qt. cold water
- 1 Tbsp. ground ginger
- 4 c. sugar
- 1/4 c. lemon juice
- 1 slice lemon (thin)
- 1 1/2 qt. watermelon rind
Directions

1Soak melon rind with 4 tablespoons salt in 2 quarts water for 5 to 6 hours; drain and rinse well.

2Mix cold water and ginger; cover and let set 30 minutes.

3Drain and add sugar, lemon juice, 7 cups cold water and lemon slice.

4Cook 30 to 50 minutes.
