- 4 lb. watermelon rind
- 9 c. sugar
- 8 c. water
- 4 sliced lemons
- 4 tsp. stick cinnamon
- 4 tsp. whole cloves
Directions

1Select melons with thick rinds.

2Peel off all green portion, using only the white part of the rind.

3Dice.

4Soak in mild salt water overnight (1/2 cup salt to 1 gallon water).

5Drain and cook in clear water for about 30 minutes or until tender.

6Drain well.
