- 1 c. butter or margarine
- 1 c. lard
- 2 c. sugar
- 3 eggs, beaten
- 1/4 c. milk
- 7 1/2 c. flour
- 2 tsp. lemon extract
- 1 tsp. salt
- 2 tsp. nutmeg
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 lb. currants, plumped with hot water and drained
Directions

1Cream shortening.

2Add sugar and cream well.

3Add beaten eggs and milk.

4Sift dry ingredients and add to mixture.

5Stir in currants.

6Roll on lightly floured board to 1/4-inch thickness. Cut with cookie cutter or biscuit cutter.

7Bake on ungreased griddle.

8Turn when brown.

9Turn only once.

10Using electric frypan set at 300°, fry for 5 minutes on each side.
