Welsh Rarebit

Ingredients

  • 1 Grated strong cheddar cheese
  • 1 Grated Red Leicester cheese (optional, I like to use 2 cheeses)
  • 2 slice of bread
  • 1 half teaspoon of wholegrain mustard
  • 1 egg, beaten
  • 1 black pepper
  • 1 splash of beer (brown ale) or worcestershire sauce
  • 1 splash of beer (brown ale) or worcestershire sauce

Directions

    Toast the bread and allow to cool.

    In a bowl, mix the beaten egg with the grated cheese.
  3. 3
    Add the mustard, beer or worcestershire sauce and mix well.
  4. 4
    Spread liberally over the toast and grind some black pepper over the top.
  5. 5
    Toast untill cheese is bubbling.

    Serve
