- 3 1/2 c. flour
- 1 c. sugar
- 1 c. shortening
- 1 egg, beaten
- 3/4 c. milk
- 1 1/4 c. currants
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
Directions

1Scald currants to soften and drain.

2Mix dry ingredients in a large bowl.

3Cut in shortening until mixture is mealy.

4Add egg, milk and currants.

5Mix until all ingredients are moist and dough holds together.

6Roll out on floured board to 1/4-inch thickness. Cut with cookie cutter.

7Heat griddle or electric frypan (about 350° to 375°).

8Grease lightly.

9Place cookies on griddle.

10When brown on bottom, turn and brown other side.

11After removing from griddle, sprinkle with sugar.
