- 12 eggs
- 1/4 tsp. pepper
- 2 large red peppers
- 1 (12 oz.) can corned beef
- 1/2 c. water
- 5 Tbsp. salad oil
- 2 large green peppers
Directions

1Cut peppers in strips.

2In large bowl with fork or whisk, beat eggs, water and pepper until mixed; set aside.

3In 12-inch skillet over medium heat, cook red and green peppers in 2 tablespoons hot salad oil until tender.

4With slotted spoon, remove peppers to bowl with egg mixture.

5In same skillet, on high heat in 3 more tablespoons hot salad oil, cook mixture until it begins to set. With spatula, lift edge as it sets, tilting pan to allow uncooked portion to run under.

6Crumble corned beef over egg mixture. Reduce heat to medium low; cook, covered, for 10 minutes.

7Makes 6 main dish servings.
