Ingredients

  • 3 lb. cooked Great Northern beans (canned or bottled)
  • 2 lb. boneless chicken breasts (skin removed)
  • 1 Tbsp. olive oil
  • 1/4 tsp. garlic powder
  • 2 medium onions, chopped
  • 2 tsp. ground cumin
  • 1/4 tsp. ground cloves
  • 1/4 tsp. cayenne pepper
  • 1 tsp. ground or leaf oregano
  • 2 tsp. dried cilantro
  • 2 (4 oz.) cans chopped mild green chilies
  • 4 c. chicken stock or canned broth
  • 12 oz. Monterey Jack cheese, grated
  • sour cream
  • chopped jalapeno peppers
  • salt and pepper to taste

Directions

    Cover chicken with cold water and bring to simmer.

    Cook until tender, approximately 15 to 20 minutes.

    Remove from pan and dice into 1/2-inch cubes.
