  • 1 tbsp olive oil
  • 1 None leek, thinly sliced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup light cream
  • 1 tsp finely grated lemon peel
  • 1 tbsp lemon juice
  • 2 tbsp finely chopped fresh flat-leaf parsley

Directions

    Heat the oil in a medium skillet on medium heat. Cook the leek, stirring, for about 10 mins or until leek softens. Cool.

    Blend or process the leek, beans, cream, lemon peel and juice until smooth. Stir in the parsley.
