White Bean Soup

  • 1 can (16 oz.) navy beans, undrained
  • 1 can (15 oz.) Great Northern beans, undrained
  • 1 c. water
  • 1/4 c. chopped onion
  • 1 carrot, diced
  • 1/4 c. butter or margarine, melted
  • 1 can (6 1/4 oz.) chunk ham, drained and flaked

Directions

    Combine first 2 ingredients in a large saucepan; mash slightly with a potato masher.

    Stir in water and cook over low heat until thoroughly heated.

    Saute onion and carrot in butter until onion is tender.

    Add sauteed vegetables and ham to bean mixture.

    Cook over low heat 10 minutes, stirring occasionally.

    Yields 1 quart.
