- 1 1/2 c. sugar
- 1/3 c. water
- 1/4 tsp. cream of tartar
- pinch of salt
- 3 egg whites
- 1 tsp. vanilla
Directions

1Combine sugar, water, cream of tartar and salt in a saucepan. Cook, covered, for 3 minutes.

2Remove cover and cook to soft ball stage (242°) on candy thermometer.

3While syrup is cooking, beat egg whites until stiff (not dry).

4Slowly add hot syrup to egg whites, beating at high speed all the time.

5Beat until it holds straight peaks.

6May add coconut for coconut cake.
