Ingredients

  • 9 c. chicken broth
  • 1 medium onion, chopped
  • 3 ribs celery, chopped
  • 1/2 c. red bell pepper, chopped
  • 1/2 c. yellow bell pepper, chopped
  • 1/2 c. green bell pepper, chopped
  • 10 oz. can diced tomatoes
  • 4 oz. can chopped green chilies
  • 36 oz. can Great Northern beans
  • 2 tsp. ground cumin
  • 2 tsp. diced oregano
  • 1/4 tsp. ground cloves
  • dash of cayenne pepper
  • 3 c. diced chicken breasts, cooked
  • Colby cheese

Directions

    In a large soup kettle bring chicken broth to simmer.

    Add all other ingredients except chicken.

    Simmer 1 1/2 to 2 hours.

    Add chicken and heat thoroughly.

    Garnish each serving with a sprinkle of Colby cheese.

    Makes 8 to 10 large servings.
