- 1 Tbsp. oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 tsp. cumin
- 2 whole chicken breasts, cut into small cubes
- 1 (16 oz.) can white kidney beans (cannellini), drained
- 1 (15 1/2 to 19 oz.) can garbanzo beans, drained
- 1 (12 oz.) can whole corn
- 2 (4 oz.) cans chopped green chilies
- 2 chicken bouillon cubes
- hot pepper sauce
- parsley sprigs
- 1/4 lb. shredded Monterey Jack cheese
Directions

1Saute in oil the onion, garlic and cumin until tender.

2Into a 2 1/2-quart casserole, combine onion mixture with chicken, beans, corn, chilies and bouillon.

3Add 1 1/2 cups water.

4Cover.

5Bake 50 to 60 minutes at 350°.

6Stir in hot pepper sauce and top with cheese.
