  • 1 lb. dried white beans (small)
  • 2 cans (4 oz. each) chopped green chilies
  • 1 cayenne pepper
  • 1/4 tsp. salt (to taste)
  • 3 garlic cloves, minced
  • 1 tsp. ground cinnamon
  • 1/4 tsp. pepper
  • 1 onion, minced (chopped)
  • 1 Tbsp. dried oregano
  • 4 c. cooked poultry, diced
  • 3 tsp. olive oil
  • 1 Tbsp. ground cumin
  • 9 c. chicken broth
  • 1 3/4 c. Monterey Jack cheese

Directions

    Soak beans in cold water overnight.

    Cook beans until tender (3 to 4 hours) or in crock-pot.

    (If in crock-pot, start them in the morning and they will be ready when you return home from work.)

    When the beans are tender, drain.
