Ingredients

  • 1 lb. dried navy beans
  • 2 boneless skinless chicken breasts
  • 1 (4 oz.) can green chiles, chopped
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 8 oz. sour cream
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground oregano
  • 1 tsp. ground cumin
  • crushed red pepper to taste
  • salt to taste
  • tortilla chips
  • Monterey Jack cheese, shredded

Directions

    Soak beans overnight.

    Drain beans and put beans and chicken in a 4 to 6-quart stockpot.

    Cover with water and bring to a boil. Reduce heat and let simmer, removing chicken to cool when it is done.

    When beans are near done, combine chiles, soup, sour cream and 1 cup of the bean juice in a mixing bowl.

    Stir until well blended.

    Add green chile mixture to beans and mix well.
