Ingredients

  • 1 lb. navy beans, soaked overnight
  • 6 c. chicken broth
  • 2 cloves garlic, minced
  • 2 onions, chopped
  • 1 can green chilies
  • 2 Tbsp. cumin
  • 1 Tbsp. oregano
  • 1/2 tsp. cayenne pepper
  • 4 c. cooked pork, diced
  • 1 can cream of chicken soup
  • 3 c. grated Monterey Jack cheese
  • green onions
  • salt to taste

Directions

    Drain water off beans.

    In large pot, combine drained beans, broth, garlic, onions, soup and seasonings.

    Simmer 3 hours.

    Add more broth, if necessary.

    Add pork, stirring only to combine. Garnish top of chili with cheese and green onions.
