White Chili (Chicken)

- 1 1/2 qt. chicken stock
- 1 lb. 13 oz. can white beans
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp. salt
- 1 Tbsp. oil
- 1 (4 oz.) can green chilies, diced
- 2 tsp. each: cumin, oregano, coriander and pinch of cayenne
- 3 chicken breasts, cooked, boned and diced
- 1 c. Monterey Jack cheese, grated
Directions

1Combine stock, beans, half the chopped onion, garlic and salt. Bring to a boil; simmer for 1 1/2 hours.

2Add more stock, if needed.

3Saute the remaining onion in the oil.

4Add chilies and spices.

5Stir and cook briefly, then add to bean mixture.

6Add chicken.

7Heat through.

8Before serving, add the grated cheese. Yield: 8 servings.
