  • 12 oz. Great Northern beans
  • 1/2 gal. water
  • 1/8 c. chicken soup base
  • 2 c. onion, chopped
  • 1 tsp. garlic
  • 1/4 tsp. salt
  • 3/4 lb. chicken
  • 1/2 c. green chillies, diced
  • 1 1/2 tsp. cumin
  • 1 tsp. oregano
  • 1 1/2 tsp. cayenne pepper
  • pinch of ground cloves
  • 1 lb. Monterey Jack cheese, shredded

Directions

    Soak and wash beans.

    Cover with water to 2 inches above beans.

    Let soak overnight.

    Drain beans; place in heavy kettle. Add to beans the soup base, onion, garlic and salt.

    Reduce heat and simmer for 2 hours; stir occasionally.

    Add chicken, chillies, cumin, oregano and pepper.

    Cover and cook for 30 minutes. Sprinkle cheese over each bowl of soup as it is served.
