White Chocolate Bread Pudding

- 24 each whole eggs
- 36 each egg yolks
- 1-1/2 gal. whipping cream
- 1-1/2 qt. low-fat milk
- 1-1/2 qt. sugar
- 2 quarts white chocolate, chopped
- 24 each French bread, cut into 1/2-inch-thick slices
Directions

1Beat eggs and egg yolks with wire whisk until well blended; set aside.

2Mix whipping cream, milk and sugar in large saucepan.

3Cook on low heat until just simmering.

4Add white chocolate; stir until chocolate is completely melted.

5Remove from heat.

6Gradually beat in egg mixture with wire whisk.

7Arrange bread slices in 2 layers in bottoms of 6 half hotel pans (1 half hotel pan for trial).

8Pour 8 cups of the chocolate mixture into each pan; cover with aluminum foil.

9Let stand 30 min.

10to allow bread to soak up chocolate mixture.

11Bake, covered, in 300F-standard oven 1 hour.

12Uncover; bake an additional 45 min.
