White Chocolate Bread Pudding

  • 24 each whole eggs
  • 36 each egg yolks
  • 1-1/2 gal. whipping cream
  • 1-1/2 qt. low-fat milk
  • 1-1/2 qt. sugar
  • 2 quarts white chocolate, chopped
  • 24 each French bread, cut into 1/2-inch-thick slices

Directions

    Beat eggs and egg yolks with wire whisk until well blended; set aside.

    Mix whipping cream, milk and sugar in large saucepan.

    Cook on low heat until just simmering.

    Add white chocolate; stir until chocolate is completely melted.

    Remove from heat.

    Gradually beat in egg mixture with wire whisk.

    Arrange bread slices in 2 layers in bottoms of 6 half hotel pans (1 half hotel pan for trial).

    Pour 8 cups of the chocolate mixture into each pan; cover with aluminum foil.

    Let stand 30 min.

    to allow bread to soak up chocolate mixture.

    Bake, covered, in 300F-standard oven 1 hour.

    Uncover; bake an additional 45 min.

    Refrigerate 8 hours or overnight.

    Cut each pan into 9 (3x4-inch) pieces.

    Serve warm by microwaving each individual piece on microwaveable plate on HIGH 20 to 30 sec.
